It’s Friday…
What do I like doing on a Friday…? Why drinking cocktails of course!
All week we’ve been sharing our first collaborative photo shoot for Coco Wedding Venues, the very rustic and every-so-beautiful A New Beginning set at Narborough Hall Gardens. This shoot covered everything – from lacy bridal fashion, striking accessories, woodland tablescapes and of course some sweet treats for our imaginary guests!
Only the things is, when The Travelling Gin Co. boys {Ed & Joe} sent me the recipe for this rather fitting English Mojito, I kind of knew that Kat and I would no doubt end up with a mason jar in hand toasting the end of our first shoot.
So follow in our footsteps and grab the gin (yes GIN) and some fresh sprigs of mint and toast the end of your week!

Ingredients
Garnish: Mint sprigs, apple and/or lime slices
Glass: Hi-Ball stacked with large ice cubes
Instructions
Layer gin, elderflower cordial and apple juice (+ optional mint syrup) into a ice stacked hi-ball.
Using a cocktail spoon, gently stir the ingredients together and slowly top with sparkling water.
Give the drink another final few gentle stirs with the cocktail spoon and add your chosen garnishes.
*A homemade mint syrup is a great addition if you like your drinks sweet. Very easy to prepare a bottle. just place equal cups of water, sugar and chopped mint leaves into a pan and bring to a boil. Reduce to a low heat, simmer for 5 minutes and then take off the heat completely. allow to completely cool, strain and bottle (will keep in the fridge for 2-3 weeks).
Tip: Clap your mint sprig/s twice to release the best aroma.
