A licence extends across the entire estate, allowing you to choose a ceremony setting that feels right for the day. Some gather beneath trees beside the stream, others stand in the open paddock, looking out across the valley, with the landscape stretching beyond. Inside, The Hay Shed offers a more structured space, its scale and timber frame grounding the occasion.
Hallington Mill welcomes a wide range of ceremony styles, from registrars to independent celebrants, with no fixed format imposed. Formal or informal, the tone is designed by you.
The former Hay Shed becomes the main gathering space. Once purely functional, it now carries its original structure with care – high vaulted ceilings, exposed materials, and a sense of volume that invites the party. Long trestle tables and vintage chairs bring guests together in a single room, seating up to 120.
After the dining, music builds through a zoned speaker system that allows for both dancing and quieter corners to coexist. There is no need to move elsewhere; the room holds the full arc of the evening, from first course to final song, with the atmosphere changing around you.
Accommodation sits within the estate itself, split between the Mill and the Barn. Together, they sleep up to 19 guests across eight bedrooms, offering a mix of shared spaces and quieter rooms to retreat to. The Mill houses six bedrooms for up to 14 guests, while the Barn provides two bedrooms for a further five.
Both buildings balance original structure with considered restoration. A large farmhouse kitchen becomes a natural meeting point-coffee in the morning, conversation late into the evening. There is also a cinema room and a dining space for up to 20, often used for pre-wedding dinners or the morning after. With two nights included, your stay gives you time to settle in, prepare, and come together without rushing.
There are no fixed menus or required suppliers, allowing you to shape the experience around your own preferences. A selection of recommended caterers offers a wide range of approaches, from outdoor cooking and barbecue to formal dining or relaxed sharing plates.
Timing remains flexible, with no imposed structure on when or how meals are served. Drinks are supported by a bar partner offering straightforward packages, with options to extend into a paid bar later in the evening. Cocktails may be served beside a vintage piano, while a converted horse box offers another point for drinks during the day. The emphasis stays on choice and ease, with the freedom to build a dining experience that feels natural to your gathering.
The estate takes a practical approach to sustainability, grounded in long-term change rather than surface gestures. Heating is provided by air-source heat pumps, and over 8,500 trees have been planted across the land, gradually transforming the surroundings and supporting biodiversity.
Waste is handled with care. Catering partners include those working with surplus ingredients, ensuring food that might otherwise be discarded is used with purpose. Leftovers are repurposed where possible, including returning organic waste to the land itself. Glassware replaces single-use materials, and suppliers are encouraged to minimise excess. Annual planting events continue to offset emissions, keeping the landscape in active balance with its use.
